INGREDIENTS:

  • Salt and Freshly Ground Black Pepper, To taste
  • 2 Radicchio Bulbs, Shredded
  • 1 sm. Shallot, Minced
  • 2 Tbsp. Champagne Vinegar
  • 1 lb. Brussels Sprouts, Halved and Lightly Sauteed
  • 2 Tbsp. Grape Seed Oil
  • 3 ½ oz. Arugula
  • ¼ tsp. Ginger
  • ¼ tsp. Cumin

RECIPE DIRECTIONS:

  1. In a small bowl, whisk together the vinegar, cumin, ginger, oil, shallot, salt and pepper.
  2. In a large mixing bowl, add the Brussels sprouts, arugula and radicchio; toss. Pour the dressing over and toss again until well-coated.
  3. Portion onto individual plates and serve.
